What flexitarian means at Berchoux
At Berchoux, being a flexitarian restaurant in Montmartre means something simple: we cook mostly vegetables and market produce, without ruling out meat or fish. In the morning, the chef builds the menu from what the market offers, and the dish of the day is written around those fresh deliveries. So you find homemade cooking that changes with the seasons, designed to stay affordable with a €15 lunch menu.
This flexitarian approach is in no way a constraint. It leaves room for vegetables and generous plates, while keeping classics such as our homemade sandwiches at €12. It is a way to eat more plant-based day to day, just steps from the Lamarck-Caulaincourt metro station, without giving up the pleasure of a genuine neighbourhood table.
Chef Julie Berchoux at the stove
Behind this cooking is Julie Berchoux. Before opening her table in Montmartre, she spent thirty years in Michelin-starred kitchens, alongside houses such as Robuchon, Ducasse, Taillevent and Fauchon. That background shows in the care given to every dish, even the simplest.
Today Julie puts this know-how at the service of market cooking, homemade and without fuss. The daily menu changes with the deliveries, and you can follow it live on our Instagram account before coming for lunch.
Flexitarian and anti-waste, one and the same logic
Since 2020, Berchoux has also operated as an anti-waste restaurant. In practice, we cook what the market offers in the morning and unsold produce comes back as the dish of the day rather than being thrown away. Flexitarianism and the fight against waste therefore go hand in hand.
This commitment continues through small gestures: less packaging thanks to our reusable tubs, a one-euro book library and speciality bread supplied by Bun's Bakery. Choosing our flexitarian restaurant in Montmartre means supporting a table that thinks as much about what it cooks as about what it throws away.
