At Berchoux, anti-waste is not a slogan: it's how we cook, right through to our catering. Every order starts from what the market offers that very day, in the right quantity, without overproducing or freezing blindly.

Whatever is left doesn't end up in the bin: it's reworked into the next day's dish. Event cooking designed in Montmartre, in the 18th, so your reception stays generous without wasting a thing.

From market to reception, without loss

Waste-free catering comes down to a few habits held on every order, from buying to plating. Here is how we work.

The morning market

We buy fresh and short, as close as possible to the number of guests. The menu is written after the market, not before: the day's produce decides.

We size each service to real numbers, without overproducing. Whatever is left after an event is reworked, never binned on principle.

Everything is prepared in Montmartre, by hand, with no industrial tray and no reheated dish. Cooking it yourself is already controlling what you waste.

Julie Berchoux spent thirty years in Michelin-starred kitchens, alongside houses such as Robuchon, Ducasse, Taillevent and Fauchon, before opening her Montmartre canteen.
